Recipe: Summer Brown Rice Delight

There’s nothing better on a hot summer day than a nice fresh, tasty salad made with yummy organic ingredients. This Brown Rice Delight combines delicious fresh ingredients with dried fruit for a tasty and healthy salad that’s delicious on its own or served as a side dish with dinner.

Parents can often find it hard to get kids eating different salads, but summer is the perfect time to experiment with different colours, flavours and textures that kids will love. Salads are a great time saver as they are easy to prepare and offer good nutrition and lots of variety.

This is one of my favourite recipes.

Brown rice salad copy

Ingredients:

½ cup cooked organic brown rice

1 corn cob or handful of rocket

¼ cup of finely chopped dried figs

¼ cup of finely chopped organic apricots

Pine nuts lightly toasted under the grill and finely chopped

Method:

  1. Cook the rice according to instructions.
  2. Steam or boil the corn cob and strip kernels.
  3. Combine all ingredients and serve with a smile.

Serving suggestion: This salad is great served together with flat head fillets simply pan-fried in a good quality organic butter with a squeeze of lemon.
